Cobb Salad Honey Heaven Recipes

 

This vibrant, protein-packed salad is a perfect light meal for two, combining bold flavours and fresh ingredients. Tender chicken breast is marinated in a sweet and tangy honey mustard glaze and cooked to juicy perfection in the air fryer. Crisp grilled bacon, creamy avocado, tangy feta, and hearty hard-boiled eggs add layers of flavour and texture, while cherry tomatoes bring a fresh burst of sweetness. Everything sits on a crunchy bed of Little Gem lettuce and is finished with a zingy homemade honey mustard dressing. It’s a satisfying and wholesome dish, perfect for lunch or a light dinner.

Serves 2

Ingredients:

  • 2 heads of Little Gem lettuce
  • 1–2 chicken breasts, marinated with:
    • 1 tsp whole grain mustard
    • 2 tbsp Acacia honey
    • Salt and pepper
  • 4 strips of low-fat bacon
  • A handful of feta cheese, crumbled
  • 2 hard-boiled eggs
  • 10–15 cherry tomatoes, halved
  • 1 ripe avocado, diced


Honey Mustard Dressing:

  • 1–2 tbsp whole grain mustard (to taste)
  • 1 tbsp Acacia honey
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • Pinch of salt

Instructions:

  1. Preheat the air fryer to 180°C and cook the marinated chicken breast for 13 minutes, or until fully cooked.
  2. Grill the bacon until crisp, then chop into small pieces.
  3. Boil the eggs until hard, then peel and slice.
  4. Prepare the vegetables: slice the lettuce, halve the cherry tomatoes, and cube the avocado.
  5. To assemble the salad, create a base layer with the lettuce.
  6. Top with the tomatoes, bacon, sliced chicken, eggs, avocado, and crumbled feta.
  7. Whisk together all dressing ingredients and drizzle over the salad before serving.
