
Soft, cloud-like pancakes layered with our new Honey Heaven Organic Raspberry Honey, finished with juicy fresh raspberries and a sprinkle of crunchy pistachios. This recipe is all about balanced light and fluffy textures paired with rich, fruity sweetness and a hint of nuttiness. Perfect for a slow breakfast, brunch gathering, or an indulgent treat any time of day.
Ingredients
For the pancakes:
- 200g plain flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 2 large eggs
- 250ml milk
- 1 tsp vanilla extract
- 2 tbsp melted butter (plus extra for cooking)
For the topping:
- Honey Heaven Organic Raspberry Honey
- Fresh raspberries
- 2–3 tbsp pistachios, roughly chopped

Prepare the batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk the eggs, milk, vanilla extract, and melted butter.
Pour the wet ingredients into the dry and gently mix until just combined. Do not overmix—some lumps are fine.

Rest the batter (optional but recommended)
Let the batter sit for 5–10 minutes. This helps create extra fluffy pancakes.

Cook the pancakes
Heat a non-stick pan over medium heat and lightly grease with butter.
Pour small amounts of batter into the pan to form pancakes.
Cook for 2–3 minutes until bubbles appear on the surface, then flip and cook for another 1–2 minutes until golden.

Stack the pancakes while warm.
Generously spoon over the Organic Raspberry Honey, allowing it to gently drip down the sides.
Top with fresh raspberries and sprinkle with chopped pistachios.
