These decadent brownies blend deep chocolate flavour with Honey Heaven Mushroom Honey, melty chocolate chips, and a pistachio crunch on top. A rich, wholesome twist on a classic favourite.

Ingredients
- 113 g unsweetened baking chocolate, chopped
- 113 g salted butter
- 240 ml Honey Heaven Mushroom Honey
- 2 large eggs
- 1 tsp (5 ml) vanilla extract
- 25 g cocoa powder
- ½ tsp salt
- ¼ tsp baking soda
- 45 g all-purpose flour
- 130 g chocolate chips, divided (about ¾ cup)
- 60 g chopped pistachios (≈¼ cup), for topping
Method
- Preheat & prepare pan: Preheat oven to 165 °C (325 °F). Line or grease an 20×20 cm (8×8″) baking dish .
- Melt chocolate & butter: In a microwave-safe bowl, melt the chopped chocolate and butter in 30-second bursts, stirring until smooth (~2 minutes total).
- Add honey: Stir in the Honey Heaven Mushroom Honey until fully combined .
- Add eggs & vanilla: Let the mixture cool slightly, then whisk in the eggs and vanilla until smooth .
- Combine dry ingredients: In a separate bowl, whisk together the cocoa powder, flour, salt, and baking soda.
- Make the batter: Fold the dry mix into the chocolate mixture until just combined. Stir in half the chocolate chips (~65 g).
- Bake: Spread batter evenly into the prepared pan. Sprinkle remaining chocolate chips and the chopped pistachios across the top. Bake for 30 minutes, or until the centre still has a slight jiggle and a toothpick shows moist crumbs .
- Cool & serve: Let brownies cool at least 30 minutes in the pan before slicing 9 squares.
