Ingredients:
For the pudding:
- 175g dates (pitted, finely chopped)
- 175ml boiling water
- 75g unsalted butter
- 175g light or dark brown soft sugar
- 250g self-raising flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 75g Honey Heaven Soft Set Honey
- 3 medium eggs
- 125ml whole milk

Instructions:
- Prep Dates: Soak chopped dates in boiling water for 20 mins. Blend if you want a smoother texture.
- Make Batter: Preheat oven to 180°C (160°C fan). In a large bowl, mix butter, sugar, eggs,
flour, baking powder, bicarb, and honey until just combined.
- Add Liquids: Stir in date mixture and milk gradually until smooth (the batter will be thin).
- Bake: Pour into a greased 1.5L dish (around 30x20cm). Bake for 35–40 mins or until a
skewer comes out clean.
- Make Sauce: Heat all sauce ingredients in a pan until melted and smooth. Simmer for 1–2
mins to thicken.
- Serve: Pour some sauce over the warm pudding. Serve with extra sauce and cream or ice
cream.
