Ingredients:

For the pudding:

  • 175g dates (pitted, finely chopped)
  • 175ml boiling water
  • 75g unsalted butter
  • 175g light or dark brown soft sugar
  • 250g self-raising flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 75g Honey Heaven Soft Set Honey
  • 3 medium eggs
  • 125ml whole milk

For the toffee sauce:

Instructions:

  1. Prep Dates: Soak chopped dates in boiling water for 20 mins. Blend if you want a smoother texture.
  2. Make Batter: Preheat oven to 180°C (160°C fan). In a large bowl, mix butter, sugar, eggs,
    flour, baking powder, bicarb, and honey until just combined.
  3. Add Liquids: Stir in date mixture and milk gradually until smooth (the batter will be thin).
  4. Bake: Pour into a greased 1.5L dish (around 30x20cm). Bake for 35–40 mins or until a
    skewer comes out clean.
  5. Make Sauce: Heat all sauce ingredients in a pan until melted and smooth. Simmer for 1–2
    mins to thicken.
  6. Serve: Pour some sauce over the warm pudding. Serve with extra sauce and cream or ice
    cream.
