Canola is a variety of rapeseed. This plant is cultivated mainly for its oil-rich seed. However, canola is ideal habitat and food source for honeybees. In fact, Canola flowers produce a lot of nectar that has a good sugar profile, and its abundant pollen offers a good nutritional balance of amino acids, protein and fats. Another peculiar trait of canola honey is that it crystallises quickly. Therefore, we use it as a creamed honey. This is what we use in our incredible tasting Cardamom and Honey product.
Honey naturally wants to solidify. This is a natural process called crystallization. To make creamed honey, liquid honey is spun periodically over a few days. The stirring process interferes with the crystallization, to make very small crystals that have the smooth, sumptuous texture that is perfect as a spread but preserves the goodness of natural honey.
NOTE: there is no cream in creamed honey!
Cardamom is widely employed in Indian, Middle Eastern, Arabic, and Swedish cuisine. The addition of this fragrant spice can add layers of taste to your tea, food and overall dining experience. Cardamom can be used in cooking and baking, as either ground cardamom or whole pods. But it is also an essential oil.
You can either use cardamom pods whole in cooking, or ground cardamom.
