Organic Ginger Honey & Carrot Soup

Warm up your soul and nourish your body with a bowl of Organic Ginger Honey & Carrot Soup. This delightful blend combines the earthy sweetness of organic carrots with the refreshing zing and sweetness of our Organic Ginger Honey.

Perfect for a cosy night in or as a starter for an elegant dinner, this soup is delicious and packed with nutrients. The carrots provide a rich source of vitamins and antioxidants, while ginger aids in digestion and adds a warming spice. The raw organic honey is also packed full of nutrients.

Embrace the comforting flavours and vibrant colours of this healthy, hearty dish!

Because we use our unprocessed raw Organic Ginger Honey, we do not heat the honey and add it as we blend the soup once its cooled down so it maintains its nutrients.

 

What you need ...

2 tbsp of butter
2 leeks
900g carrots 
3 bay leaves
2.5 litres vegetable stock
2 tbsp of Organic Ginger Honey 
Pinch of pepper
Sour Cream to serve (if you wish)

Method 

1. Melt the butter in a large sauce pan

2. Chop the leeks and add them to the butter cook until soft

3. peel and cut the carrots and add them to the soft leeks cook for 3 mins

4. Add the vegetable stock, pinch of pepper and bay leave and eave on a  low light for about 40 mins to simmer

5. After 40 mins check the carrots are soft if so proceed to next step, if not give them another 10 mins on a low heat.

6. Leave the soup to cool until its at the right temperature to eat 

7. Add to a blender with the Organic Ginger Honey and blend until smooth.

8. Serve and enjoy.
