What you need...

Ingredients Roasted butternut squash

  • 340 g butternut squash peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • salt and pepper
  • 2 tablespoons fresh thyme(leaves only, no sprigs)
  • 2 tbsp of Organic Soft Set Honey

Ingredients for the Orzo

  • 225 g orzo uncooked
  • 5 cloves garlic minced
  • 25 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 600 g chicken stock
  • 5 teaspoon salt
  • 5 teaspoon Italian seasoning
  • 75 g spinach fresh
  • 119 g heavy cream or full fat coconut milk
  • salt and pepper
  • fresh thyme

Instructions...

  1. Preheat oven: Set the oven to 180°C
  2. Prep butternut squash: Toss cubed butternut squash with olive oil, salt, pepper, honey, and thyme. Spread it on a parchment-lined baking sheet.
  3. Roast squash: Bake in the preheated oven for 20-30
  4. Cook orzo: Heat olive oil in a Add orzo, garlic, paprika, and cook for 3 minutes.
